A Natural Cosy Christmas

I cannot believe it’s Christmas time again and sadly another Covid Christmas!

We are going to celebrate with a small natural family Christmas with our family – our two grown up children will be home from University & our youngest who is 14 years old will enjoy to play cards and computer games with them.

I myself am looking forward to winter walks with our elderly flat coat retriever called Payton – we are blessed here in Bath with having access to lovely country walks from the centre of Bath itself.

I will sit as often as I can in front of a roaring fire and read a book wrapped up in a blanket of course – one of my most simple pleasures.

I will enjoy cooking simple food – my favourite pudding is an oven baked Amaretti cheesecake with ricotta cheese

.Ingredients

15g softened butter for greasing tin with.

40g amaretti biscuits

750g ricotta cheese

150g caster sugar

6 free range eggs

100ml double cream

1 lemon – Zest only

4 tbsp amaretto liqueur.

Heat oven to 150c

Grease a 9” cake tin with the softened butter and add  ¾ of the crushed 40g amaretti biscuits – keep the remaining crushed biscuits for the topping of the cheesecake.

In a mixer mix the ricotta cheese, caster sugar, 6 x free range eggs, double cream, lemon zest and amaretti liqueur.

Pour into cake tin and cook in oven for 45 x minutes.

Once cooked – turn the oven off and open the door ajar and place a wooden spoon in the door to allow heat to escape – cool in oven or 3 hours.

Place cake tin on top of a small pudding bowl and slowly ease the outer cake tin down to release the perfect cheesecake. – Keep cheesecake in the fridge.
